All of this fee goes directly to our staff. This provides the team with some much-needed certainty about their wages and allows us to offer the same rate of pay to everyone, regardless of what position they are working in. It is not necessary to leave extra, but in the case that you're feeling generous, any additional gratuities will be split evenly amongst the staff as well.
